I don’t know about you guys, but I’ve been pretty much over this dreadful thing we call winter since December 26. Although I have lived in the Chicago suburbs my entire life, I have never adjusted to the 6 month winter season. With the onslaught of global climate change/global warming/the fictional thing made up by and for the Chinese, winters are more…confusing. If you caught today’s vlog, you will see a little tangent about global warming. Tuesday it was 17 degrees out, yesterday it was 47. Thank you meat and dairy industry, your excessive production of livestock has done wonders for our carbon footprint.
More to the point, there are plenty of ways to stay warm during those week long seasons of below zero weather. One of my favorites is warm soups. First of all, they make the house smell amazing, the make the soul feel cozy, and they warm the body from the inside out. Here are a few of my favorite veg friendly soups from around the internet. Most are vegan. The ones that aren’t, use vegetable stock instead of chicken broth and skip the cheese or choose a vegan cheese.
